You’ll need a food processor to make this recipe.
- 4 cups fresh basil leaves, packed
- 1 1/4 cup extra virgin olive oil
- 1/4 cup walnuts
- 3 garlic cloves, minced
- Salt and freshly ground black pepper to taste
- 1/2 cup freshly grated Parmesan cheese
Place the walnuts, and garlic in the food processor. Process for 20 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan-and puree for a minute. If you’re not using it right away store in the refrigerator or freezer with a thin film of olive oil on top so it doesn’t brown from the air.
